Long-life bakery products

Planning production for long-life bakery products — biscuit, waffle, cracker: line design, tunnel ovens, packaging at high speed, raw-material handling from delivery to line.

Biscuits, crackers and waffle slices in long parallel rows side by side, as if on an oven belt

Long-life bakery products mean long lines, tunnel ovens and high throughput at consistent quality across shifts. Every percentage point of line efficiency and every product changeover counts here.

What matters

Line design, oven technology, handling of delicate products, cooling sections and packaging have to be tuned for maximum, stable throughput. Energy consumption and changeover times decide profitability.

Raw-material and ingredient handling

Long-life bakery products often mean a large number of different raw materials and ingredients — toppings, jams, sweet decor, crumbles. Well-planned raw-material handling makes sure every ingredient is in the right place at the right time. We plan that from goods-in right up to the line.

What the equipment has to deliver

We engineer the long line as a custom fit for throughput and product changeovers — process-reliable from dough preparation to packaging. From process reliability follows the efficiency that, on long lines, feeds straight into the margin.

Operator level & building

Long lines need well-planned access, safe routines and short cleaning routes. We plan the building for straight-line flow, energy efficiency and hygiene.

Packaging decides line performance

Long-life bakery products are baked and packed — that is what keeps them shelf-stable. Which is exactly why the focus here is not on chilling or freezing, but on packaging.

These are mostly small products in very large volumes. Primary packaging — the unit pack that keeps the product shelf-stable — and secondary packaging run at extremely high speed. The packaging area therefore sets the performance of the whole line: what the oven puts out, the packaging has to take in reliably.

That is why we engineer primary and secondary packaging, buffers and outfeed together with the baking line from the start — not as an afterthought at the end.

Our edge

We design line and building for the economic optimum of throughput, energy and product changeovers — and stay through to stable series production.
